Chef French Cuisine
French cuisine is the OPERATING SYSTEM of Western professional cooking — culinary schools teach it first not from snobbery but because its codified techniques (Escoffier's systematization) transfer to everything. This skill = the canon in home-executable form. Much of its machinery already lives in this skillset (chef-sauces-guide mother sauces, chef-technique-guide heat, chef-training-progression the school ladder) — here is the French CONTEXT and repertoire.
The French grammar
- Fond is wealth. Stock (fond) underneath everything; the brown crust in the pan (fond, same word) is deglazed into sauce. Nothing flavorful is rinsed away — ever. Pan grammar: sauté → remove → deglaze (wine/stock) → reduce → mount with butter (monter au beurre) → sauce over the rested protein. This five-beat sentence is 60% of bistro cooking.
- Mirepoix (2 onion : 1 carrot : 1 celery) is the flavor chassis of soups/braises/stocks — sweated patient, never rushed brown unless the dish says so.
- Butter is a technique, not a garnish: beurre noisette (brown, nutty — cues in doneness table), beurre monté (emulsified gloss), compound butters (herb/garlic discs on steak — the laziest luxury).
- Reduction over thickener: French sauces concentrate by evaporation first (spoon-coat cue), flour/starch second. Taste transforms as water leaves — season at the END of reduction or you'll salt-trap yourself (optimizer's classic catch).
- Discipline IS the cuisine: mise en place, taste-season-taste, rest your meat, warm your plates. The French kitchen invented the habits in
chef-training-progression— бригада (brigade) is literally its word.
The braise pantheon (forgiving = beginner-friendly luxury)
- Bœuf bourguignon: beef chunks seared HARD in batches → mirepoix + tomato paste → red wine + stock → 160°C oven to fork-test (2.5–3.5 h) → pearl onions + mushrooms sautéed SEPARATELY folded in (soggy-mushroom prevention) → better tomorrow (event-planning's make-ahead star).
- Coq au vin: same architecture, chicken thighs, shorter clock.
- Confit: salt-cure → submerged in fat at 90–110°C for hours (oven or slow cooker — equipment guide) → crisped at service; keeps a week+ under its fat (

The egg exams (French skill checks, home edition)
- French omelet: hot pan, butter foaming-not-brown, constant small shakes+stirs, rolled pale and creamy — no color is the tradition; 90 seconds. THE technique interview dish for a reason: it's heat control distilled.
- Soufflé: base (thick béchamel/pastry cream + flavor) + meringue folded in thirds (pastry skill's folding rules); rage-hot oven, NO door opening, serve in 90 seconds — fear of soufflés dissolves after one attempt; they're just disciplined bubbles.
- Mayonnaise/hollandaise by hand — emulsion literacy (

Bistro repertoire (the home-worthy shortlist)
Steak-frites (sear + compound butter; oven fries honest), soupe à l'oignon (caramelized onions — the honest 40+ min, doneness table), quiche (blind-baked shortcrust from baking guide + custard 3 eggs : 300 ml dairy), salade lyonnaise (frisee+lardon+poached egg — gentle-methods egg), ratatouille (each vegetable sautéed separately then united — the respect-the-vegetable dish), crêpe stack (1 egg : 62 g flour : 125 ml milk, rested), tarte tatin (caramel courage from pastry skill).
Classicism vs today (use with judgment)
Escoffier codified; modern French lightened (nouvelle cuisine cut the flour-heavy sauces — more jus, more acid). Home strategy: classic ARCHITECTURE + modern restraint: less butter than Careme, more than fear suggests; acid always (the French finish: squeeze/vinegar drops — flavor-balance law). Wine in cooking: dry, decent-not-precious; the pairing side lives in chef-beverage-pairing (enogastronomy is French home turf).
